{TWD} Catch up! All Spice Crumb Muffins

Here is the  another recipe I missed. We baked this one back in Oct. of 2009...  Allspice Crumb Muffins from the cookbook Baking from My Home to Yours by Dorie Greenspan, found on pages 16-17.

I made six large muffins. I let them bake for an extra 10 minutes..
They turned out good. I especially love the crumb topping!

Allspice Crumb Muffins

For the Streusel:

1/2 cup all-purpose flour

1/2 cup (packed) light brown sugar

1/2 teaspoon ground allspice

5 Tablespoons cold unsalted butter, cut into bits

For the Muffins:

2 cups all-purpose flour

1/2 cup sugar

1 Tablespoon baking powder

1/2 teaspoon ground allspice

1/4 teaspoon salt

1/4 cup (packed) light brown sugar

1 stick (8 Tablespoons) unsalted butter, melted and cooled

2 large eggs

3/4 cup whole milk

1/4 teaspoon pure vanilla extract

Grated zest of 1 lemon (optional)

Getting ready: Center a rack in the oven and preheat the oven to 375 degrees F. Butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper cups. Alternatively, use a silicone muffin pan which needs neither greasing nor paper cups. Place the muffin pan on a baking sheet.

To Make the Streusel: Put the flour, brown sugar and allspice in a small bowl and sift them through your fingers to blend. Add the bits of cold butter and toss to get irregularly shaped crumbs. Set aside in the refrigerator for the moment. (You can make the crumbs up to 3 days ahead and keep them covered in the refrigerator.)

To Make the Muffins: In a large bowl, whisk together the flour, sugar, baking powder, allspice and salt. Stir in the brown sugar, making certain there are no lumps. In a large glass measuring cup or another bowl, whisk the melted butter, eggs, milk, and vanilla extract together until well combined. Pour the liquid ingredients over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend. Don't worry about being thorough--the batter will be lumpy, and that is just the way it should be. Stir in the lemon zest, if you're using it.

Divide the batter evenly among the muffin cups. Sprinkle some streusel over each muffin, then use your fingertips to gently press the crumbs into the batter.

Bake for about 20 minutes, or until the tops are golden and a thin knife inserted into the center of the muffins comes out clean. Transfer the pan to a rack and cool for 5 minutes before carefully removing each muffin from its mold.

I'm going through all the recipes I missed in Dories cookbook "From my home to yours"! I wanted to make these cookies but wasn't able to for some reason.
They are wonderful and tasted like  little mini carrot cakes! I added chocolate chips instead of raisins!

{TWD } Alsatian Apple Tart

It's another double header at Tuesdays with Dorie this week. Our first delicious recipe was chosen by Jessica of Cookbook Habit, who selected Alsatian Apple Tart. I didn't have the time to make the brownies, the other choice.  Be sure to check out Jessica's blog for the tart recipe.
http://cookbookhabit.blogspot.com/

I have not been baking much lately, and I miss it. I was excited to get my hands on this recipe and back in the kitchen!
Since the half marathon I have been working out more, trying to keep my strength  going I gained from the half !! I don't want to lose it quite yet! Maybe when the snow hits and I'm surrounded by Christmas cookies, I'll be ready to back off!
The tart was easy to put together. I used the nut version of the sweet tart recipe, using ground up pecans.

This is SO good....We loved it! The crust is like one big giant cookie and the custard filling with the apples is tasty!!

{TWD} Honey Walnut Scones

Jeanette of http://thewhimsicalcupcake.wordpress.com/ chose our recipe for today's TWD.  What a great way to celebrate the first day of NOV.!  I get happy when we get to make scones. I love scones but it's just not something I make a lot.
I tried Nancy's idea of scoring, then baking. I didn't see any difference in the way my scones turned out.  All though I liked how they came out in one big disk !
I really enjoyed the almonds, could NOT taste the honey(I will add more next time).

They were perfect with butter and homemade raspberry jam on top! A perfect Fall treat!

Here at TWD we are doubling up on recipes. I wanted to make the Far Breton but ran out of time.
Nicole of Cookies on Friday selected the Far Breton so you’ll want to stop by her blog to see that recipe.

I leave you with a little Subway art! My latest addiction! Happy Fall!

{TWD} Apple And Oats CAKE!!

My neighbor is someone whom I have known since Elementary school? Mary was a year behind me. When we moved in to our home eight years ago, I was happy when I discovered she lived right across the street from me. We have developed a wonderful friendship over the past eight years. I am happy to say she is a BFF!  Today is Mary's Birthday. I made her this cake!! I'm not sure everyone likes figs , so I decided to use apples instead.
I did not use cornmeal , instead I used Bob's 5 grain hot cereal(it's like oatmeal)!

She said the cake tasted wonderful! I think it turned out pretty!
 Happy Birthday Mary!
Thank you  Alvarosa of Cookie Rookie. If you would like this recipe but made with figs check out here

{TWD} Biscuits, Fried Chicken, Sugar Cookies and a cute football player!

Thank you Jennifer of Cooking for Comfort for choosing this weeks TWD recipe! If you want the recipe head on over to her blog!

http://juju73.wordpress.com/

I love Biscuits! My favorite way to eat them is with butter and jam!! This recipe was a piece of cake and the biscuits turned out nice!  I love my scalloped edges on my biscuit cutters...I also Love my rolling pin!
I made some big and some small!
They turned out a sweet golden brown color..
Just the way I like mine..small and flaky..just the right size to pop in my mouth!
SO this morning I ran 13.48 miles..Yes you heard me right!! It was hard.  The weather was crappy and my running partner wimped out on me. I have a half marathon race Nov. 5 so this run was scheduled as part of my training! I was bound and determined to do it. WEll GUESS what...I have the best husband ever! He took the morning off from work and drove the Yukon while I ran:) He would stop every few miles with water, a smile and mostly a big FIRE IT UP MUSE!!  Our  fav. words to say to each other during a competition. He knows all about competing..THE man is SECOND in the WORLD in the DISCUS!! Soon to be first:) So anyways ..I decided a long run deserves a dinner of my choice! I cooked up some fried chicken..Soaked the meat in buttermilk for 3 hours and cooked it up in bacon Grease...yikes!! BUT sooo GOOD!!!!
I got the recipe from one of my fav. cookbooks! I love the Mitford Series! If you have not read the books, you should!
Louella is one of my favorite characters in the books! She may give Minnie, from The Help, a run for her money with her fried chicken!

Here is my great reward for a long hard run this morning! I enjoyed every bite of the fattening greasy chicken! The biscuits went well with the meal!

Before I  leave you .. Here is  my 13 year old son..He is quite the athlete, just like his Daddy! His football team has won 6 and lost 1...he's on his way to practice! I love this boy! He is a gentle giant..so kind, so polite..and I am proud to say mamas boy(shhh don't tell him) !
 GO RAVENS!!!!

Salt and Petter shortbread...TWD

It's Tia's turn to host again! Tia of Buttercream Barbie is a fantastic baker and has the best pictures! Be sure to check out her blog here. http://www.buttercreambarbie.com/

I really wanted to like these cookies but something just didn't fly with me. I thought they were lacking in sweetness.  I followed the recipe exactly as written. Maybe more sugar would help. My family weren't big fans either...now what to do with 24 cookies:)

OOO next week is that wonderful Plum Cake!!!
