My mom made these for us growing up..I love them and so does my family!
Recipe:
Beef Enchiladas
Simmer in large frying pan the following ingredients:
2-8 oz. cans of tomato sauce
1 -6 oz. can of tomato paste
1 -10 oz. can of tomato soup
2 cups water
1/2 cup oil
2 tbsp. chili powder
1 pack flour tortillas(10)
Brown 1 lb. ground beef with onion ad 1 tsp salt, drain grease.
In large bowl mix meat, 3/4 lb. cheddar cheese and small can of chopped black olives(optional)
Dip tortillas in sauce. Fill each with ground beef mixture. Put fold side down in Glass dish.
Pour remaining sauce over the tortillas and top with 1 cup cheddar cheese.
Bake at 350* for 20 minutes

I was just talking about making enchiladas today, but have to make the tortillas first. Yours sound so yummy!
