Big Sky Pie

My dad shared this recipe with me years ago. I have made it so many times, it has become a family favorite! It's perfect for a fall evening meal or any evening really!
Big Sky Pie
Serves 8-12
1 box 13 3/4 oz. hot roll mix
1 can-16 oz. stewed tomatoes
1 1/2 pounds ground beet
1 cup chopped onions
1/3 cup parm. cheese
1/3 cup parsley
1 1/2 tsp. salt
1 1/2 tsp basil
1 /2 tsp. oregano
1 1/2 cup shredded mozzarella cheese
Directions:
Prepare hot roll mix according to mix directions. Divide dough into 3 portions. Roll 2 into 9 inch rounds. Fit each into two greased 8 inch cake pans(1/8 inch thick) Roll remaining dough into 8 x 10 rectangle and cut into 1 inch strips. Meanwhile, drain tomatoes, Set the juice aside. Cook meat and onion in skillet. Drain the fat and add the tomato juice. Simmer until the liquid evaporates. Stir in the parm. cheese, parsley, salt, basil and oregano. 
Cover dough in each pan with the meat and top with tomatoes and  mozzarella cheese. Cover with crisscross strips of dough. Let rise 15 minutes. 
Cook in preheated 350* oven for 35 minutes.
