This is an amazing healthy and tasty recipe!
1 cup quinoa
1 3/4 cups chicken broth
2 tsp olive oil
1/4 cup finely diced red bell pepper
1/4 cup finely diced yellow bell pepper
2 finely chopped leeks
2 medium finely diced carrots
1 large finely diced celery rib
1 tsp minced garlic 2 tbsp. freshly grated Parmesan cheese
salt and pepper
1/4 cup chopped cilantro or parsley
Directions~
In med. saucepan, combine quinoa and chicken broth and bring to a boil over moderately high heat. Reduce heat to low, cover and simmer until quinoa is tender and all liquid as been absorbed, about 15 minutes. Meanwhile in a medium skilled, heat oil over moderately high heat. Add red and yellow bell peppers, leeks , carrots and celery. Cook 6 to 7 minutes, stirring occasionally, until tender, Stir in garlic and cook for 1 minute longer. remove from heat and keep warm while quinoa cookds. Stir the warm vegetables into the quinoa. (At this point can be made up to 1 day ahead; cover and refrigerate. Reheat over moderately low heat before procedding.) Stir in Parmesan cheese and season to taste with salt and pepper. Sprinkle parsley and serve hot.
